Ingredients
120g unsalted butter (melted)
100g light brown sugar
50g granulated sugar
1 large egg & 1 egg yolk
1 tsp vanilla extract
120g plain flour
40g vanilla whey protein powder
1/2 tsp baking powder
Pinch of salt
100-150g chocolate mini eggs (crushed slightly)
Method
Preheat your oven to 180°C (160°C fan)
Line an 8x8 inch baking tin with parchment paper
In a bowl, whisk together;
- Melted butter
- Brown sugar
- Granulated sugarMix until smooth and glossy then whisk in:
- 1 egg and 1 yolk
- Vanilla extractMix until fully combined and slightly thick
In a separate bowl, mix;
- Flour
- Protein powder
- Baking powder
- SaltGradually fold the dry ingredients into the wet mixture
Don't overmix - just combine until a soft dough forms
Fold in most of the crushed mini eggs
Save a handful for the top
Spread the batter evenly into the tin
Sprinkle remaining mini eggs on top
Bake for 20-25 minutes
Edges should be golden & centre slightly soft (it will set as it cools)
Let cool in the tin for at least 30 minutes
Slice into squares
